I would say its 16ga, very sturdy and I love it!

Q: non stick? how is this for stir fry noodles?

Like any carbon steel pan it will become non-stick with use.

Q: Will this work well on a charcoal BBQ? I have a grate with a wok opening in the center.

I don't see why not. It could probably even sit in the coals - heats the same as gas. Just make sure any moisture doesn't linger as rust eats away at it. I treat it like my cast irons.

Q: I fry filleted catfish a couple of times a year. I have been using a turkey deep fryer, it works well but wastes a lot of oil. Will this wok work?

Town 34718 18" Steel Welded 2-Handle Wok Cantonese will work for frying fish. To prevent the smell from spreading throughout the house we used on for a fish fry outside and it worked very well without wasting a lot of oil.
