Is this Agar Agar 100% pure, or does it have preservatives added please?

Hi, on the packet they do not mention preservatives at all, but this does not guarantee that there isn't any trace of them. On the other hand, it is not even mentioned that they are 100% pure... so probably they aren't. Hope this helped. :)

Would this work for marshmellows and maybe to replace geletin in a mirror glaze?

No. Agar does not have the shine that gelatin provides. Agar also has a “crunchy” texture when set, which would not be right for a mirror glaze. This also means agar gels have a coarser consistency than gelatin gels, and thus would not provide the right mouth feel.

Are there any ingredients in this product other than agar, and what grade of purification is this product?

No its just agar agar and its A grade. I use 1g agar to 100g liquid for making gels

No preservatives, but not sure about the fungi thing
