Corn in good shape: dry. Cooks up well.
I rinsed what would’nt fit in the jar, soaked it for an hour. Decided to toss that water, add boiling, leave out to cool, put in fridge overnight. Next morning kernels are fatter and starting to crack. Cooked at a tiny simmer for couple three hours or so. Keep setting alarm so water doesn’t dry away and corn would burn. Only added a little salt so I can use it in sweet or savory. I kept cooking and tasting to get it soft and moist as I like, the flavor stayed really good. Texture is good. Keep cooking water about 1/5” above kernels in pot, till you get to what you think will be the last 20 minutes or so, then don’t add anymore but don’t let it burn away. I tell you what turned out to be my recipe bcs I kept finding conflicting ones. This stuff has been properly lime treated and is non gmo, as per their website. Please excuse me now, I have to make some garlic butter for my hominy, a little bacon too. And poached eggs. 😁

More flavorful than White Corn Posole
I have used both Los Chileros Organic White Corn and Los Chileros Organic Blue Corn Posole. I prefer the blue corn, as I think it has more flavor.I soak the posole overnight, then use an InstantPot on pressure cook for 40 minutes with a quick release.

Fabulous Flavor & Texture & Easy to Cook
I have been using blue corn for over 18 years. But this particular company's blue corn has the best flavor and texture of any that I have used previously. Also it cooks up more quickly. Put it in the pan, cover with water, bring to a rolling boil and then reduce to a simmer. Shortly you will have a tasty blue corn to include in your soups, or with beans. I have already ordered more of their corn so that we don't run out.

I ordered this expecting to receive Blue Corn. This was Blue Corn POSOLE - not the same thing. This company's Blue Corn posole IS Good - just that this order was not what I expected!

High quality and delicious
What a difference these make in the taste and presentation of a home cooked meal. I used this to make both pazole and hominy as a side. My wife who does not usually like canned hominy, enjoyed the texture and taste of the blue corn much better. The natural variation in colors from almost black to soft purple make for a beautiful and visually interesting dish. The texture is more toothsome and unlike canned, can be adjusted to your preferences by cooking shorter or longer.
