Wickers is a great vinegar-based marinade and base for making BBQ sauce
Wicker's is a vinegar-based marinade that I have used for decades. Unfortunately, it is not available in stores in my area. Fortunately, it is available from amazon. Wicker's contains cider vinegar, black pepper, salt, sugar, chili powder, dry mustard, paprika and cumin. I have tried to duplicate the recipe, but mostly failed. It is not cheap, $24.95 for a gallon, but I'm hard-pressed to realize my smoking and BBQing potential without it. My primary use is as an ingredient in my home-made BBQ sauce. Another great use other than marinating before smoking is to drizzle it over the pulled pork after all is said and done.Wicker's is an essential for Carolina style, vinegar based BBQ. I still have the original jug from years ago.

Best Memphis style basting sauce in a bottle!
Glad to find Wickers available at Amazon! Grew up on it in Memphis as it’s a perfect Vinegar based baste for smoking pork shoulders and ribs. It’s also great in chicken. To do it right one dry rubs the meat, then use theirs as a baste about twice an hour. This is not a thick ketchup based barbecue sauce. It has no sugar and no fake artificial smoke flavoring. It’s vinegar, water, spices, salt. I can make my own but this is better. (I’m talking original)

Simmering
After BBQ'ing the pork-steaks, it is my tradition to put those pork-steaks in to a large 11x17 pan and filling the pan half full with the Wickers Marinade putting into the oven for 5 hrs @ 170 degrees. This will melt the fat right off those pork-steaks. When you try to lift that pork-steak out of the pan it falls apart, the meat is very tender and the flavor is the best of all. I've been doing this for over 20 yrs. This is not your typical tomato based sauce, it is Vinegar based and it has a little kick to it. It is not hot, but it does have a little spice to it. If you don't want to put the pork-steaks in the over for 5 hrs, then put the pan on the BBQ pit turn it down low and keep an eye on the pan to make sure it does not go dry, for about 30 mins to an hour and you'll get the same results. (I think better results in less time). Good Luck.

Great for chicken and ribs. KETO
Eating BBQ while following a low carb/keto diet can be boring since I can't use sweet sauces but this stuff helps me maintain my sanity. It gives whatever you are grilling a lot of flavor without the carbs found in regular bbq sauce.

Seriously Good
This is the first time I've ever used Wickers, and it won't be the last. I use it on some chicken thighs for about 3 hours and then grilled them. It gave it a nice flavor without anything being overwhelming. I can see if it were left on for a longer period of time (I often marinate for 24 hours) it might be a bit intense. But shorter marinate times with Wickers are just about perfect.

This is absolutely THE best steak marinade - bar none!
We have been using this marinade for over 20 years now!It is the only steak marinade that we have ever used that completely enhances the flavor of the meat without overwhelming it.In addition, the marinade does an outstanding job of tenderizing the steak. Our favorite recipe is as following:* 1 1/2" think rib eye steaks.*Marinate with Wickers in a vacuum packed pan - it you have one, if not - no bid deal for at least 36 to 48 hours in the refrigerate. * Add Chicago Steak seasons while cooking the steak - we usually grill them, but have broiled in the oven as well.

Have used Wickers for years for 4th of July smoked ribs. Marinate in wickers for 24-48 hours, then smoke for 7-8 hours. Always get rave reviews from entire family and extended family (54 folks at dinner this year) I never use anything but WICKERS!!

Best marinade ever!
So happy to have found Wickers on Amazon. Family favorite for years! Used as a marinade to inject Boston Butt pork roasts then rotisserie on grill or low and slow in oven or quick browning then into the crockpot if weather isn’t great for outdoor cooking. In Texas we could find it in a few grocery stores but no luck with that in Florida. Amazon to the rescue! Added bonus was finding the dry rub too. Great for chicken—baked or BBQ on the grill. As other reviewers noted, it’s not a thick, sweet sauce. It’s a thin, vinegar based marinade with lots of spices and depth of flavor. Be sure to shake the bottle well before using to get those spices well mixed before pouring or injecting into the protein. If you’ve never tried it, give it a go, you won’t be disappointed!
