Good taste
Baby lima beans are pretty generic but these are very tasty. I would recommend either soaking them with clean water overnight or if quicker is needed, bring them to a boil for 5 minutes and let them cool and poor off the soak water. Cook as you usualky do. Or saute half a chopped onion, salt and pepper, add 2-3 strips of raw bacon (bacon is better than using country ham or hocks, which is too strong and i am country), cover beans with 2-3 inches of water which wil absorb, bring to boil and skim off foam and discard), reduce heat to have a gentle boil, stir occasionally, add a little water if getting to thick, cook for 2.5 to 3 hours. You can add a small piece of bay leaf and/or other spice suich as tyme, rosemary, but only if you know how that may change the flavor. Good without it or maybe just the bay leaf. Too much spice can overpower cooked dried lima beans. Serve with raw sweet onions, tomatoes and cornbread or biscuits; You can pour the beans over reglar white rice or such as basmati or Thai. Great protein and very filling. And iced tea, of course.

Just what I needed
For some reason I haven’t been able to find Lima Beans in our stores so I ordered these. They are a good quality with few dudes in the package.

Beans split while soaking
Three bags went to the garbage. Tried beans from 3 different bags. All split while soaking. On top of that, warning on label said product was not inspected for insects. These must be very old beans. I’ll stick with Goya or Sadaf brands. Unfortunately , you can’t return food items.

These large Lima beans , are a great value . I used pork bacon & added red onion , seasonings & some bullion . They cooked up nice & tender , thickened my gravy some , put over white jasmine rice ... Will purchase this brand , when I need to restock ...
