Do you refrigerate the infusion?

It is shelf stable, but once you add your spirit, I do suggest refrigeration. You do not have to refrigerate it, but it makes for a better taste!

How many drinks do these make?

I'm not sure once you let it sit for the sugar melt and how strong u want your drinks to be. I have used this and loved it. The Margaritra mix directions say strain100ml which is about 3 ozs which could mean 7 drinks possibly.
