Knives should be TOOLS not INVESTMENTS or DISPLAY items
I am a 'blade guy'. I feel strongly that the right blade can make working with food both easier and safer. I am NOT a butcher block holder / set of 36 marginally used knives kinda guy. Most of the time, you don't need $100 forged blade with rosewood handle to do your best work. This review is for the 6" boning knife with curved blade. The blade is stamped; the handle is plastic - it is a GOOD TOOL. If I ever 'use it up' from years of use and sharpening . . . I'd just buy another - it's not that expensive. The handle girth/cross section is larger than typical with an excellent grip (my hands are not huge and it's comfortable). It arrived adequately sharp (not awesomely sharp). My first use was breaking down and deboning a turkey . . . it went REALLY quickly. I've also used it on red meat . . and was satisfied after doing a bit more honing. I'd buy another if needed. I'd recommend to a friend.

Very sharp and easy to use
It's nice owning a great quality boning knife. This Mercer has made trimming different cuts very easy and precise. I've used it about a dozen times this month and it's still holding a good sharp edge. Handle has a great ergonomic shape and grip.

A grade!!
A great tool! Sharp blade makes smoother cutting activities besides the comfortable handle. Ideal for cleaning meat surfaces like silverskin and fat.

Great inexpensive knife for trimming meat, nonslip handle works great even wet.
Fantastic knife for trimming brisket, it's inexpensive, easy to sharpen with a cheap carbide sharpener (so no needing to deal with whetstones). The handle is solidly made and is not slippery even when wet. I'm not sure that this will last forever, but for the price...I'll buy 2 more when it goes.
