Chewed Chewing Gum texture.
I'm always looking for a low carb alternative. Health claims aside this looks good, no smell like konjac but it has the texture of chewed chewing gum. The taste is neutral. Neither good nor bad.

Low carb, versatile, and delicious - best of both worlds!
I love carbs but I am prediabetic so I need to watch what I eat. This edamame spaghetti gets it right. I cook these in boiling water for 4 minutes and it comes out with firm texture and consistency that is the closest to wheat pasta that I have ever tried. They used to sell this at Costco but Amazon is the only place where I can consistently find this now and I can't live without it. You can use this also as a soba noodle substitute and it goes well with soba dipping sauce. I know this is more expensive compared to wheat pasta but it is worth it. The package can last for several servings but it tastes so good that you want more. It does have a slight green color because it is made from soybeans but it goes well with just about anything you usually cook with wheat pasta. It does not get soggy quickly when in pasta sauce. If you need a pasta alternative that is diabetic friendly, this will be your go to product.

Honesty is important. Good, but not great.
Since nobody on this website wants to be honest, let me leave this here. These noodles are NOT a suitable replacement for wheat flour spaghetti. The flavor is beany. The noodles are slightly rubbery upon chewing. The noodles seem to lack volume and have a slightly coarse texture. I was hopeful this would be a good fit for my pasta dishes since it likely contains little to no glyphosates (a modern problem that I think everybody should get educated on). The people claiming that these noodles taste "just like regular spaghetti" are simply trying to justify their purchase and choice while throwing a blind eye to any gimmick they deem worthy of trying. I would even go so far as to conclude these people are simply tasting the sauce and ignoring the vessel. If that's your think, go for it. While these noodles aren't awful, I won't be substituting with them. Wheat is most popular for a reason. (Just wish wheat didn't have all the glyphosates...) To put this product into perspective... this is 9x more expensive to buy than regular pasta, and it's a terrible choice for that price. Had this been more of a reasonable price, I'd consider keeping some in my pantry for quick pasta dishes. Most pasta goes for anywhere between 5c/oz and 8c/oz in typical grocery stores. This costs 48c/oz. These are not bad noodles, but given the price, I can't recommend.

Excellent source of vegan protein
Excellent high protein pasta. It is delicious but it takes an acquired taste to be able to enjoy its health benefits. A truly vegan food. I highly recommend it only if you are willing to take time and patience to adjust to its unusual taste. It does not taste like regular white and whole wheat pasta

If texture matters to you, beware
Since receiving a pre-diabetes diagnosis, I have craved pasta. i had high hopes for this "spaghetti" to replace the high-carb option. Sadly, this product did not work for me. I made a delicious pesto from homegrown basil, and smothered a bowl of this spaghetti, only to be really disappointed. I am big on texture, and this stuff just put me off. It is really skinny, yet, it has a weird chunkiness to it. The flavor is not overwhelming, I could put up with that. But, the texture made me feel like gagging. I wish I hadn't bought the 2 lb box.

This is one of the best gluten free products I have found. It looks great, it cooks quickly, it is amazing mixed with vibrantly coloured vegetables or served with a creamy sauce. , its really healthy and contains no refined flour which is brilliant!

Let me clarity: I like the item (I've bought it before) but the company I bought it from packed it shabbily, and it arrived all broken into tiny bits. Not usable as spaghetti at all. Not happy. :-(

I usually love most lentil -based products but this spaghetti is not good. When cooked, it had no color and was similar to the "back in the day" canned spaghetti, in terms of texture. To add insult to injury, I felt sick to my stomach a few hours after eating this product, something that has never happened with other types/brands of organic pasta. Also had a weird, unpleasant "flavor", like it was stale in spite of an ok BB date. The price is also outrageous. This is a very small amount of pasta, about half of the usual sized packages. Definitely won't be buying again.
