Will this work with the new ipad air?

can probably work because the keyboard is connected through Bluetooth, nevertheless you should check the thickness of the iPad and the size of the screen. This one is designed only for iPad pro brydge has some other options for other iPad models

Is there any first moment typing delays between the keyboard and iPad ?

No delay that I saw, but I don’t recommend this product. Bad rubber hinges can fail and crack or chip the glass and the multitouch gestures are nowhere equivalent to Apple’s Magic’s Keyboard. I returned mine and paid more money for Apple’s keyboard and trackpad. Much happier!!!

Is there any Spanish layout option?

The Keyboard has foreign languages built in.

Will this keyboard work with the ipad pro 12.9 (5th generation) due to be released by apple in mid-may 2021?

Unfortunately, it will not be compatible. It's only compatible with 3/4 generation models. There will be a new Brydge 12.9 Max+ due out in June that will be compatible with 3rd, 4th, and new 5th generation iPad Pros. You can view it on the Brydge website.
