Q: What psi can the valves take without leaking?

160 PSI at 73.4 degree's F. 100 PSI at 180 degree's F.

Q: Does the 0.5" size refer to the outside or inside diameter of the pipe?

In a word INSIDE diameter. Ya see, The FLAIR-IT 1/2 in. Plastic PEX Stop Valve pushes into the hose ID (inside diameter) and the nut you slide over the hose tube screws on the OD (outside diameter) of the plastic fitting to pressure lock the hose, so the more pressure on the fitting the better it locks on to the hose preventing any leaks, a fantastic design to say the least. So the water hose your fitting onto would be 1/2 inch "inside diameter", as if you measure the Outside dimensions you'll see it's a bit bigger than 1/2 inch.

Q: will this valve work with white flexible hose found in rv's? not pex.

I use it on the gray hose in an RV called PB or Pb. Works so far. Not all pex is red or blue. Maybe you have white PEX. Go for it.

Q: What psi can the valves take without leaking?

All Flair-It fittings are NSF listed and designed for hot and cold water applications with pressure ratings that will exceed 160 psi @ 73.4•F and 80 psi @ 200•F.
