Expensive for the size and hard as a brick, but don't be concerned!
If you are going to need this for baking, I suggest you give yourself time since you won't be able to just scoop this out of the bag when you get it. Many reviews shared that the sugar comes hard. They are not lying! I purchased this product to use in water kefir since I don't like the overpowering taste of molasses. This is my second box and both came hard. The good thing is the box tells you how to make the sugar soft, so they know the deal. Fortunately, I have a clear brown sugar canister that has a terracotta disk that's stored in the cover. A few hours after putting the literal brick inside that canister, the sugar started to soften. The next day, I was able to scoop out what I needed without issue. The sugar is not very sweet, but it has a very nice flavor compared to store bought brown sugar. Though I purchased this for water Kefir, it came just in time for me to try it in some homemade chocolate chip cookies.

Dark Muscovado sugar is fabulous ! It's important to note that it is absolutely necessary to store it in a sealed plastic or glass container so it doesn't turn into a sugar boulder. Bought this sugar on a whim thinking it MIGHT be good and it certainly looked like something a different than you'd ever find in a supermarket. What a thrill it is. Granted, the packaging is plain, nothing at all fancy about it but what's inside is very fancy with a flavor so divine that it invites you to try it in everything. Here are a few of the things I've used it for since it arrived in my kitchen. Adds an elegant, gourmet flavor when used as a topping on french toast. On hot cereals such as oatmeal, cream of wheat, cream of rice it tastes rich and the steam rising smells so good. And here's a news flash: Mix a rounded teaspoon or two in hot or cold milk for a real treat. Or if you're like me and into making from scratch hot cocoa, instead of mixing granulated sugar into the cocoa powder mix about 1/2 as much Muscovado sugar for an out of this world cup of hot cocoa. The flavor is deep and heady with an aroma that will knock your socks off. Want to add some pizazz to your beef stew? Add a half teaspoon of Muscovado to it about 1/2 hour before it's finished cooking. It also will add great flavor to chili when you add teaspoon full to it near the end of it's cooking time. Cut up a few apples, an orange and add a 1/2 cup or so of dried cranberries and a handful of crushed walnuts or pecans, sprinkle a rounded teaspoon of Muscovado sugar on top and give it a light toss. Let the mix sit in the fridge for an hour or so and you have a grand fresh dessert OR - and let me tell you this is so good you'll want to do it again....instead of serving that mixture cold (it's winter here), pour it all in a sauce pan and simmer it until the apples are soft. Serve it warm. OMG! it's good. I've also tried the warm mix with a splash of Peach Schnapps and a dollop of whipped cream added right before serving and the flavor blew me away. All of our dinner guests have given it rave reviews. The next thing I'm going to try it in is whipped cream - I'll come back and let you know how that goes.

Hard as a rock, literally!
Based on recipes that swear by Muscovite sugar, I was excited to receive this brown sugar to use in my oatmeal cookies. I opened the package and cut the inner package open with scissors and thought I would scoop out some sugar to use in my cookies. It was impossible, as it was as hard as a rock. I slammed it on my granite counters, and it was so hard that I thought it was going to crack my counter. I could not get it to break apart. I have no idea how old this product is as there is no discernible expiration date on the packaging other than the one pictured here, and I’m not even certain that that is an expiration date. There is a label on the top of the box that reads that if the sugar is hard, cover it with a wet cloth until it becomes soft. I never imagined that it would be so hard that I couldn’t even break into it. I rarely write negative reviews, but this one certainly does deserve a negative review.

Repackage as soon as you get it, excellent.
Make sure to keep something to maintain the moisture level and put it in a better bag as soon as you get it. It has a very nice, deep flavor that is exactly what I wanted for my Peanut Butter cookies. It does take a bit longer to fully cream into butter, it is slower to break down, but I think that is to be expected. For what it is, I think the price is reasonable, I could never find something like this in my area.

Unusable upon arrival. Had to rehydrate.
This was hard as a rock. Unusable when it arrived. Dry and hard, like a brick. Previous orders the product was usable. Update. After reading the package and following directions on how to rehydrate the product, it's now usable. Just disappointed in how the product arrived.

Fabulous product! And don't worry, there is a way to soften your sugar!
I had previously purchased this sugar in the 2.8 LB tubs and had no problem with my sugar being soft. When I received this purchase, 4 one-pound packages, they were all intact. Yes, they were firm, but when I began to gently squeeze each package, I found there was some "give" and knew I would not have to soften them any further for what I was going to use them for. I have friends who are professional bakers and what many of them do to soften hardened brown sugar is put it in a closed container with a piece of bread for at least 24 hours. Try it, what do you have to lose but a piece of bread. And yes, you can use the ends too!
