will this work in a 2x6 setup

I have it on a 3x7 setup, so I would think it would work as long as the cable pulls it to the right positions for the 6 sprockets in the back.

Is it a good fit for a Mongoose Xr 250 mountain bike?

My husband bought this for a Monggoose, and it was not a good fit.

Can this be installed without breaking the chain?

Yes, you can remove the derailuer sprockets, and get the top section of chain in place, sprocket back in then the same for the bottom.
