Q: So is this a heat conductor or a heat insulator? Can i use this to seperate a hot component from something that needs to be kept cool?

It is a thermal conductor and electrical insulator. It will allow heat to transfer from the hot component to the cooler one.

Q: What the correct size for gtx 780 rerefence ??? 1.0mm, 1.5mm or 0.5mm ??

I'm not sure what the correct size is, but 0.5/1.0/1.5mm is usually the most common thickness for thermal pads between vram and the heatsink in my experience.

Q: How well do these pads work on a 780m gpu?

if it works on all GPU I have used them in a GTX950 and a playstation 4 in the memories ram console GDD5
