Q: Has anyone tried the small amount of 1 cup uncooked brown rice with success?

the amount of rice is too small and spread out in the relative large pot and not totally covered up by the suggested amount of water will lead to poorly made rice. Try at least 2 cups of rice which we had success with or buy a smaller rice cooker

Yes for 2 cups rice. Just remember there is not an auto shutoff, so if the power is left on in the warm position after cooking the rice will burn at some point.

Q: Can an extra stackable steamer tray be acquired and will they stack?

They will stack but the tray is not available as a separate purchase yet.
