Hi there, you can substitute Otto's Naturals Cassava Flour for nearly any recipe that calls for regular flour. There are some exceptions - like breads and pretty much any recipe that requires yeast - but we have already optimized recipes developed for you right on our website for most of those. And I'm happy to report that our cassava flour makes a fantastic roux! Use just like you would regular flour for that. Hope that helps!
