Q: how to remove salt chamber to fill with pepper corns

Rotate the metal top of the salt shaker counterclockwise until it comes off. Then pull the salt chamber carefully straight up and you will be able to access the pepper chamber.

Q: Does it dispense kosher salt or is that too course?

It works with Hain Sea Salt, which is kosher, buy I don't think it would work well with coarse Kosher salt, unless the salt also had some fines within, which would fall out, leaving the larger crystals behind. Btw, I recommend only filling about 3/4 full to keep salt away from shaft top and threads. Unscrew the lid about once a month and wipe off threads with a damp cloth. Rinse lid and allow to dry overnight before reassembling.
