Q: Does it allow you to switch the correct aspect ratio for switch games?

No. It does not allow you to switch aspect ratios. Switch games are (AFAIK) all 16:9, so the image will always appear stretched.

Q: Will this fit on the Capcom Legacy cabinet?

It will fit but there will be a gap, between the board and the monitor by 1/8-1/4 of an inch, it’s only really meant for gen 1 cabs.

Q: What is the polarity on the power connector? I’m using mine standalone, and need a power adapter

I think you can use the same power supply as the arcade1up

Q: Is the joystick digital or analog?

Joystick is analog. It does work for smash, but you only run. You have to tap an attack or guard to start walking.
