Wonderful
Not crazy about the single side sharpening, but only because I am left handed. Beautiful piece of work and craft.

Sharp? Forget it
Not sure where positive reviews came from. The knife I received was incredibly DULL. That's not just disappointing, it's DANGEROUS.

Sharp but unbalanced knife
The media could not be loaded. I used to sell knives so please forgive the heavy terminology. I recommend searching "parts of a chef's knife" online if you want to learn more. The photo makes it look like a forged knife with a full bolster, which justified the price point. While it's technically a forged knife with a contiguous piece throughout, I was disappointed to find an unnecessary gap in the bolster that will gather germs and gunk over time. (see image)A proper chef's knife allows you to finger balance the knife at the bolster - the point where the blade joins the handle. This knife is blade heavy, and tips over at the bolster. It delivers on sharpness and durability, with two week's of consistent use before I have to hone the blade. You can get away with 6 months between whetstone sharpening if honed properly. The recommended angle is 15 degrees. Don't use a standard sharpener, please. It will run your knife. It is $50 less than a Shun for good reason. I'd still recommend it with caveats because authentic Japanese VG steel and Japanese construction with 60-62 Rockwell hardness is rarely available at this price point. You are sacrificing some style and balance to save $50. Just make sure to scrub out the bolster after handling meat.

Razor sharp
Made in Japan. Many knives say “German” or “Japanese” in the title, but most of them come from China. This knife is actually made in Japan and is a very high quality. It is THIN and razor sharp. They didn’t waste a bunch of money on packaging, it went into the product. Very happy with this knife. It slices through everything without smashing. The handle isn’t excessively weighted and it causes no fatigue. Happy with this item.I hope my review was helpful to you.
