One of my favorite chocolates
Used in baking, ganache, and ice creams. Worked well if you are looking for an alternative to your off the shelf grocery store offerings. This is expensive, but you taste the difference. It's not overly bitter which is nice. Valrhona is my preferred chocolate. Just wish availability were a little better with all their offerings. Also cam packed in an insulated bag with one of those ice packs. Nice addition if you live in a hot climate.

Excellent chocolate, poor delivery
This is delicious chocolate, suitable for baking or eating out of hand. It has a great sweet-bitter balance, and (as wine drinkers might say) a long finish. We were fortunate to visit recently the Valrhona factory in Tain l'Hermitage, and this product tastes just as good as the samples we had there. The only problem was that UPS dumped the package out by the end of my driveway, about 30 yards from my house, on a warm summer day. Fortunately I spotted it fairly quickly, so no harm done.

Arrive late and chocolate was melted
What’s not to like about this chocolate? Only problem is it arrive late and the chocolate melted a little bit. Putting it in the freezer so I can use it later.

Doubled in price in one year

Valrhona makes the most amazing baking chocolates. The Caraïbe is my favorite of the options. I've used it in both soufflés and home made ice creams. My last use of this chocolate was in ice cream. I used a recipe from David Lebovitz's Perfect Scoop book. The ice cream batter must be cooled in the fridge before running it through the ice cream maker. It cooled into the most delicious pudding. My husband had no idea I was making ice cream and just consumed the pudding straight out of the bowl. What he didn't consume was processed through the ice creamer and the final result was heavenly. The freezing/creaming process made it taste even better. The fruity/woody notes of the chocolate were still very easy to detect, and really assisted in adding richness to the ice cream. I'm literally still craving it and can't wait to make it again.
