Nikon D750  (FX) or Nikon D500 (DX) ? .....upgrade from Nikon D7000......

There is no easy answer but if you like wildlife or sports photography the D500 would be a better choice. For landscape and architectural photography I would take the D750. The D500 has an incredible buffer which allows you to shoot 200 photos at one time, the latest Nikon autofocus and exposure features and 4k video and if you already have DX lenses they will work great on the D500 but not so well on the D750. I use both FX and DX cameras and both have their pros and cons. Your choice should be based on what kind of photography you plan on doing.

do you have to use a xqd memory card in the top slot of the new nikon d-500 camera

I think this special card is designed for fast video response. But, when you can afford one, get it then.
It's good to have. You can set it up for when the SD fills up, the extra images will load onto the XQD.
Or the opposite. Use the XQD for your main, and spill over loads to SD.
OR..... Some people set up the camera in preferences to, make a backup, at the same time Both SD and XQD.
So if one fails, you have everything on the other one.
OR!!.... You can designate the XQT for RAW files, and at the same time a Jpeg copy goes to SD!
You can even choose what level jpegs you want. Super large, best quality, or Email size, while at the same time,
capturing the the same image on the other card as full-on RAW files!
If you don't know what any of this is, later, as you grow into photography, you'll be happy you have such a professional camera!

i photograph my pets and people. I shoot indoors, would this camera be good or an overkill? I am debating btw the 500 or 750. I

I have both the D500 and the D750. My opinion is go for the D750 id you expect to make huge enlargements; the D500 if you will mostly view digitally or at snapshot size. The D500 is much quieter and has greater continuous shooting speed for capturing action. The D750 has a larger sensor size.

I'm not seeing anywhere to buy a Nikon D500 new. Is this just another supply chain issue?

Nikon is fully committed to mirrorless. They've discontinued probably the best crop sensor DSLR ever in the D500. And the D850 was universally recognized as possibly the best all-around DSLR ever. Nikon has probably made their last DSLR unless they put out another flagship - D7. You can still find D500's new and used if you look. The move to mirrorless should yield a good selection of late-model DSLR's in good condition on the used market and some stores still have some new ones in stock.
