Amazing all rounder
Cracking knife that I got at a very good price, arrived razor sharp, well balanced, reassuring weight without being heavy. Santokus really are great all rounders and wusthoff have done a great job with this item.I found the granton hollows don't help that much.Be aware that the blade is sharpened to 10 degrees, wusthoff's sharpeners I believe are 14 degrees. You will change the blade geometry if you use a pull through sharpener.

Great all round blade! Highly recommend.
If you're looking for a great all round kitchen knife, this is the one for you. Can be used in place of a chef's knife, has a slightly different profile in comparison, as well as a textured blade to prevent food sticking as you slice. Excellent quality, super sharp and very comfortable to use. Wusthof blades will hold their edge well as they're very durable, but I'd recommend learning how to keep the edge using honing rods and whetstones down the line for longevity.

Sharper than you'd imagine possible
You can shave with this knife, so be careful!I've used Global knives previously, and been a fan but I've always admired the handling of Wusthof knives and find them a bit more comfortable to use. These blades are sharpened to 14 degrees rather than Globals 16, so they are much sharper, but require more care down the line. 100% recommenced.

Brilliant but uncomfortable knife
The knife is perfectly fit for purpose and the blade is amazingly sharp as you'd expect, but I personally find the Ridge where the handle meets the blade isn't well rounded, it's got enough of a point that I find it digs into your hand when using the professional grip, if you just held the handle it wouldn't be a problem, it just makes it uncomfortable to hold for long periods of time

My 'go-to' knife
Perfect for vegetables and swift slicing. The knife is very sharp and has retained its edge for at least six months with minimal maintenance. The straight edge is a delight to use and I have steadily got more confident at swift chopping. I particularly go to this knife as it is the easiest for me to use to chop veg really small so that my 5 year old doesn't notice I'm smuggling vegetables into his food!
