Gorgeous and Delicious! - The Senior Perspective
10/24/2021: Omg! These mushrooms make my mouth go crazy and lift my ramen to a whole new level. I had previously purchased another brand that were pre-sliced and very disappointing. These require a teensy bit more work for the slicing, but they are so worth it. I keep my uncut, dried mushrooms in a gallon ziploc bag full of water in my refrigerator.It's just me so I process five or so at a time leaving them fully covered in the water to re-hydrate for two days before slicing. It's worth the extra time, and the water is also used to make my ramen (making sure to keep the remaining mushrooms covered). This gives me delicious, flavorful ramen without use of the "salt packets" the companies put in the ramen packages.

Beautiful, large, and flavorful
These mushrooms are so beautiful I was reluctant to open the package! I sautéed some for a casserole and plan to use them in a stir fry next. They are so large, you only need a few at a time. The stems are hard to remove without soaking first. I was hoping to be able to snap them off, but couldn’t. After soaking I used kitchen shears to remove the stems. I recommend room temperature or warm tap water and a long soak, at least 30 minutes.

These are the best tasting dried Shiitake mushrooms I have tried
Dried shiitake mushrooms have more flavor than fresh, at least that has been my experience. The local grocery stores where I have purchased organic fresh shiitake mushrooms cannot compare to the quality and flavor of these Japanese shiitake mushrooms.We eat first with our eyes and the shape of these mushrooms are huge and they look very healthy. The caps are nice and round and the “star” or “flower” on the cap indicates that these are of the best quality.I’ve used them in soups and stir fries and they have consistently added impressive flavor to any dish. I am very impressed with the flavor and quality of these Japanese shiitake mushrooms.

So disappointed because it’s China product.
I bought the Japanese dry shiitake mushrooms from this business company on Amazon, and they are so flavorful and tasty. My family is very satisfied with them. That shiitake mushrooms really came from Japan. When I found the price dropped on Amazon, I didn’t hesitate at all to buy 2 pounds again ! But after receiving, I found the package and the color of mushrooms are totally different , and the product is from China, not from Japan anymore. I am so disappointed! I may return them. I would rather spend more money to buy real shiitake mushrooms from Japan as before!

Superior to Chinese Dried Shiitake
As far as dried Shitake mushrooms are concerned, these leave little room for improvement. Each mushroom was in perfect shape and amazingly uniform.They seem a bit milder in taste than the usual dried shitake, but compared to fresh shitake they are similar in all but texture. They do take a long time to totally rehydrate. I found cool pure water to work best, but other fluids such as a bit of soy sauce or few drops of fish sauce also add a bit of zest.I have found it best to separate the stems before rehydration, then I place the pieces of the caps in water to soften, but put the stems in my electric coffee bean grinder and add the powder to broth or soup while cooking.It may also be possible to do this after they are rehydrated with a good blender, but I haven't tried it.Anyway, if you throw away the stems, you are throwing away a good source of flavor. The stem and the cap are made of the same micilium and only differ in density, so use the stem powder to fortify broths or sauces.

BEWARE: No longer from Japan!
The last ones I ought in the 8 oz package were marked as coming from Japan. The 16 ounce package is marked as coming from China. BEWARE.

Not flavorful at all!
Used this product to cook a dish I cook a lot and was very disappointed when the dish did not taste as expected. The dish's flavor requires good and strong-flavored shiitake mushrooms for it to taste good and unfortunately after cooking, the whole meal was not mushroomy, but bland. The texture of the shiitake was good but just lacking in flavor. Looks like I'm back on the hunt for proper dried shiitake mushrooms!
