I'm wanting to connect my old PC to my new iMac directly to transfer my files faster. I've been transferring via my wifi network. Will this work?

It will hook up your pc to your Mac via thunderbolt using an Ethernet cable. I am not sure about your Mac recognizing the connection

this adapter works for my Macbook Pro pretty well, but it does not work for my Air. I tried many times. I do not know where the problem is.

Must it be a gigabit use only or can it work with any wired ethernet connection regardless of speed? If not, can I buy the USB-ethernet cable instead?

There is absolutely no reason to get thunderbolt, USB 2.0 goes up 450mbps with 300 being the typical peak. For comparison, the most common internet today only goes from from 20-50mbps. Most at home routers don't even support Local Area Networks to 300mbps, you're really only getting thunderbolt for the name really. Thunderbolt is overkill for this, a good use of a thunderport would be like hooking up a 4k resolution monitor that needs tons of bandwidth.
