Season it!
These are perfect. You must season these- the preseason is only enough for shipping. Open every window and get your fans going before cranking the heat on your oven up to 400-450 degrees F. Windy days are best for seasoning so the airflow is great. Thin layer of olive oil 4 times is perfect.

Love it!
I use the lid as a shallow pan as much as the deep pan to sear and cook delicate meats like beef tenderloin. I recently used the pan/lid for braised short ribs. I would say that the meal was one of the best to have ever been prepared in my kitchen. I keep finding new dishes to cook and use it inside on the stove or in the oven and outside on a 14" Camp Chef propane burner. One tip: allow pan to fully preheat and pay attention to temperature. Oils and fats can smoke profusely if too hot. A lesson I learned early on.
