The Vollrath Z4008 riveted pan handle is reported to be oven-safe up to 450 degrees Fahrenheit. I have never used it in the oven.

Q: I love over easy eggs...will they stick to the ceramic? Do you lke the ceramic coating better than other coating?

We love the Ceramic coating. This is the third pan for us and all are still in use and the coating lasts longer and is more durable the most Non-sticks. Highly recommend this pan. Still can't use a hard (metal) spatula. But really with this size you will find yourself flipping eggs and pancakes with no utensils.

No, you should hand wash. Here is Vollrath's care and use info for washing this product. WASHING NOTICE: Do not use strong alkali based cleaners (lye, soda ash, or trisodium phosphate) or oven cleaners. The can discolor and corrode aluminum, even when used as a weak solution. 1. Vollrath recommends washing by hand, using a solution of hot water and a mild detergent, to maintain the finish. 2. Cookware with burned-on food or deposits can be soaked for up to 30 minutes to help loosen the food. NOTICE: Do not soak cookware for an extended period of time. Extended soaking may cause pitting or corrosion. 3. Always scrub in the direction of the material grain. 4. For non-stick cookware, use only scouring pads approved for non-stick cookware. 5. Rinse with clean, hot water. 6. Air dry cookware in an inverted position to allow water to freely drain. 7. Make sure cookware is completely dry before storing

Q: Is the pan flat or slightly domed? I like to cook with a little bit of oil. Will the oil stay in the middle or quickly run to the sides?

It's supposed to be flat, but the logo on the bottom is so heavily embossed that is causes a small, raised area at the center of the cooking surface; A small amount of oil will drift away from the center. I attached a pic of the area in my review.
