I haven't had any problems with the mat rolling up while I'm kneading bread. After I've washed it, it rolls up easily to be stored in the original box.

Q: What size mat do you recommend? I want to use the mat to roll out pie crust and I am a total newbie.

I have the large size and totally recommend it. It's nice to have the extra room to put dough aside while still being able to roll. Also, a little side note. Make sure the underside of the mat is clean of any residue, i.e. dust from flour or else it won't stick to the table.

Q: Will it move when rolling dough?

It never moves with rolling. Sticks perfectly to the counter and I love that it doesn't move.
