Q: Does the handle on these knives curve slightly to the outside (for right hand users) or is my knife bent?

Handle is D shaped. I'm actually left handed but it always felt comfortable

Q: The description reads vg-10, shun has switched to vg-max for this knife, are people receiving the new vg-max or the older stock now?

I can't answer for everyone but my stock is VGMAX. Shun has been using VGMAX for a while now so chances are everyone's stock uses this steel core.

Q: Is this the shun tdm0766?

I can't answer what the model number is, but that is the chef knife we have and I love it. We've had it since last Christmas and I only sharpened it once.
