Paleo Pancake & Waffle Mix, Grain Free, 13 oz (368 g)

It's still hard for me to believe. I really love these pancakes! Historically, sometimes nothing could suit me better than a pancake & sausage breakfast. However, a little while back, my nutritionist read me the "riot act!" You probably know the routine: that whole mix that includes the pancreas, insulin, AC1, the adrenals, and a lot more. I tried to defend myself and, besides other things, she told me I better start using non-grain products for cooking and baking: almond, coconut, paleo flour, etc. I thought that was the equivalent of telling me to chew on plastic. An Amazon search turned up this Paleo Pancake & Waffle Mix. Reluctantly, I bought it, thinking if I get desperate I can try it. Desperation came sooner than I thought. Wow! This is easy to make! You can see the pictures: You can add blueberries or anything else you like. A touch of vanilla or almond extract doesn't hurt. Amazingly! They cook like real pancakes! They brown like real pancakes! They look like real pancakes! More amazingly! They taste like light, fluffy pancakes! As you can see, I topped these with turkey sausage crumbles cooked in organic maple syrup (diluted with water - doesn't really affect the taste - but we don't need all the sugar). I didn't even put butter on these, another amazing thing! I think you too will be pleasantly surprised!

This is by far the best paleo pancake mix I've bought. I've always tried making my own paleo pancake mix by combining almond flour with coconut flour, but this by far is superior to my own ratio I use at home. I've also tried other brands like from Simple Mills or Birch Benders, but to me this one is superior. I do recommend if you use it, to also add in vanilla extract to your batch. Overall, I would buy this product again, however it is sad how expensive it is. But, it is a high quality :)

I tried this since I’m diabetic and gluten sensitive and this is lower carbohydrates. The flavor is there, but the value and volume isn’t. Gluten free pancake mix will produce an large difference in quantity of pancakes for the money.
