Q: How does the non stick surface hold up?

Excellent so far. I clean it with a damp not wet sponge and a little dish detergent and wipe it dry with a paper towel. I leave it open for a little bit, in case I missed any spots to make sure it dry.

Q: Are the plates removable for cleaning?

No, they are not removable. The omelette comes out clean so it is easy to clean.

Q: My question is to the seller or manufacturer. Is this omelet maker easy to clean & does it come with a timer?

Very easy to clean as it is non stick and no timer but when it is ready the green light goes on. You have to get use to when to remove omelet thru experience in making them. Takes less than ten minutes to make omelet.
