Will it still work if saltwater occasionally splashes it?

I do not believe it is made for saltwater. I don't use mine near water. However, you might be able to coat the terminals with a light greece and get by for a while near salt water.

could these be used for ebike, to allow 2 differant size amp batteries set up.( 2 battery set up have differant. connections)

It could be used to connect two batteries, but I would worry about this extension cable being able to carrying the (amp) load. I would go to a local welding supply store and get a couple of feet of 6 Gauge (50 amp) Black Cable. If they don't have the right kind of end terminals to put on the cable, they can tell you where to look for them (auto parts store).

are these safe for marine environment?

These are not waterproof so I personally would not recommend use on a saltwater boat. Freshwater might work if you dried it fully after use. This connector is a 2 pole version of the flat 4 pole trailer connector used on cars, tricks and trailers.
