Easy and basic
As a vegan I always look out for new cookbooks. This book would be great for beginner vegans. Very informative. Recipes are simple and don’t have hard to find or obscure ingredients.

A must for any cook, the recipes are fantastic!
A must for anyone, not just vegetarians or vegans! This cookbook has so many great and simple recipes. I always thought a cookbook was a great if i liked at least half of the recipes. I want to try them all in this book! I am gluten free (for health reasons) but I know how to modify those recipes that are not. I substitute tempeh with tofu and use gluten free options in recipes that call for a certain type of noodle for example.For anyone learning about cooking more with vegetables or moving towards a strictly plant-based diet I recommend this book. I'll be ordering it for Christmas gifts this year.

Easy To Follow!
I have a few friends who are vegans and I purchased this book in attempt to learn how to make vegan friendly meals when I host a gathering. The recipes are easy to follow and no the book is not filled with salads. There are barely any salad recipes! Would definitely recommend to anyone attempting to cook vegan friendly meals for the first time!

Good recipes
This has become my go-to cookbook. I don't consider myself a beginner cook but maybe I am because it turns out this is a beginner cookbook and I love it! Nothing too complicated, minimal spices, easy but still really tasty!

Simple and appealing
Eating Vegan is a new tutorial and recipe collection for vegan cuisine by Dianne Wenz. Released 14th April 2020 by Callisto on their Rockridge Press imprint, it's 150 pages and available in paperback and ebook formats. It's worth noting that the ebook format has a handy interactive table of contents as well as interactive links. I've really become enamored of ebooks with interactive formats lately. For Kindle Unlimited subscribers this book is currently included in the KU subscription library to borrow and read for free.This is a very appealing and accessible cookbook mostly aimed at beginning cooks and readers looking for entry-level recipes which aren't too 'way out there' for transitioning to a plant based diet. The layout is sensible and easy to follow. An introduction (what vegan food is, the benefits of plant based nutrition, myths and facts about veganism), is followed by a pantry list of vegan staples, some cooking and food handling information and tools and supplies.The recipes are grouped by category: breakfast, salads soups & stews, snacks & sides, handhelds (sandwiches, wraps, etc), mains, deserts, and staple recipes and ingredients.The recipes have their ingredients listed bullet style in a sidebar. The headers include a description, including special info such as leftover friendly, nut free, and plan ahead. Measurements are given in US standard only. Special tools and ingredients are also listed, along with yields and cooking directions. Most of the ingredients are easily sourced at any moderately well stocked grocery store (some items will need a specialist co-op or vegetarian grocery). Nutritional information is included in a footer at the end of each entry. Tips and variations on each recipe are also included in a text box at the end.The book also includes a short author bio but lacks any index or general ingredients index. There is also no metric conversion chart included in the book. The author includes some interesting web resource links for further reading.My main quibble with the book is that the recipes are mostly not photographed. There are some photos, and they're clear and attractive, but they only represent about 5% of the recipes included in the book. It is, however, a very well written book for anyone who is looking for a solid introduction to vegan cooking and lifestyle.Four stars. This would make a nice choice for a housewarming gift for a newly-fledged first apartment dweller or beginning cook exploring vegan food.Disclosure: I received an ARC at no cost from the author/publisher for review purposes.

Easy, Quick Vegan Recipes
Although I'm not a vegan and don't intend to become one, I do cook for vegan family members. Plus, I do eat vegan meals on a regular basis as a healthy (and delicious) alternative to an omnivore's diet. For those reasons, I can never acquire enough vegan recipes to make things more interesting. The problem with vegetarian and vegan recipes, however, is that they often take longer, simply because prepping vegetables is more consuming than throwing a piece of meat on the grill. Eating Vegan by Dianne Wenz focuses on recipes that will not discourage new and potential vegans by being too involved. Most prep times are 10-15 minutes, with cook times usually about 30 minutes, both of which are listed at the top of each recipe.The recipes themselves are good, often with options to substitute store-bought products for homemade. For example, although Wenz provides a recipe for vegan ranch dressing, she also says that you can use store-bought non-dairy ranch as a substitute for those recipes that include it. The strength of this cookbook, however, lies in the culinary answers to dishes that a new vegan might miss. The poke bowl uses hearts of palm to mimic a meatier tuna while using the other standard ingredients; she suggests using nori if the eater misses the fish taste. Buffalo cauliflower is basically the same as the non-vegan version except that the author uses nut milk instead of dairy and vegan ranch instead of traditional. The book doesn't contain a ton of recipes -- only ten for desserts and breakfasts, slightly more for main courses -- but it's a good place to start.As with all Rockridge Press cookbooks, this doesn't contain many photographs, and that's an issue for people who like to see a dish before they attempt it. The lack of color photographs may keep the price of printing down, but it can also alienate inexperienced cooks who can't envision how a recipe will come together. If you don't care how a dish looks or can imagine how it will taste by reading the ingredients, this shouldn't hold you back.-- Debbie Lee Wesselmann

A must have book
This has become my favourite recipe book. I normally by a cook book and may may 3 items if I am lucky. This is filled with easy to make mouth watering delights. I am new to veganism but wow this book is brilliant and will live on your kitchen counter, not the bookshelf. I can’t recommend it highly enough. Just bought another copy for my vegan friend.

I love the ease of this book. Easy to find ingredients. Recipes that are flavourful, and straightforward.
