Sturdy and well built but NOT sharp.
I've used Chicago cutlery for many years, both the Utility, Chef knives and kitchen scissors. As with all things, they didn't last forever and needed replacement after 20 years. So knowing the quality I so enjoyed with the knives and scissors I'd owned, I naturally went for Chicago cutlery for replacements. What a disappointment! The wood and sturdiness appears to still be there but I'm not interested in appearance, what I wanted was functionality. None of the knives arrived sharp. I've used them on meats of different types (steak, pork, chicken etc.) and each time I've been totally disappointed, they simply won't cut or slice as they should. Of course, I could resort to having them professionally sharpened but now I'm also leery of what the results may be as I now question what the quality of the blade steel maybe. If they're not adequately sharpened at production, one must ask why, and it raises other red flags. Be ware. I will be replacing them asap and will not recommend Chicago Cutlery as I have in the past.

Excellent Quality
I have another set of Chicago cutlery that I have owned for 40+ years which I took to my lake place. I ordered new Chicago cutlery for my main home. I cook a lot and use knives constantly and these new knives are just as good of quality as my old set. I always use mineral oil on the wooden handles to keep them from drying out and never put them in the dishwasher.
