Q: What is the correct length of this pan? Also, is it too big for a 3 cup flour bread recipe?

probably not. Its 8 3/4" long inside, and about 3" tall, a little bit more than 5" wide. Its small. 3 cups flour dry would just about fit with a little room left. My husband is the bread baker and he likes it a lot.

Q: Would you recommend i preheat this like a dutch oven? Or can i place the bread dough in it during the final proof and then place it in the oven?

I always do my 2nd rise in the pan. I make bread often. I have 2 of these pans. If the recipe is for only a 3 to 4 cup flour mix, I use one pan. I slightly warm my oven with my oiled steel bowl & oiled pan(s) in it as I'm proofing the yeast and making the dough, turning the oven off to keep it from getting too warm (I don't always to do that in the summer) My 1st rise is in the bowl. After the punch down I let it rise a second time in the pan. About 15 minutes before I'm done with the second rise I take the pan out of the oven & put it on top of the stove while I heat the oven to my baking temperature. I love these pans! After a couple minutes of the pan coming out of the oven, I turn the pan over & the bread drops out of the pan!

Hello, Lodge Manufacturing makes the only cast iron loaf pan made in th USA that I know of. Sante Fe and Old Mountain are made in China.

Q: Has anyone ever done a lead test on this pan?

It is cast iron. Not lead. Lead melts at a temperature lower than bread is cooked at
