Good Stuff
Fresh is best of course but the dried root works well. Just remember to let it soak for awhile, I suggest an hour or more, I soaked it a half hour but it was still tough...but tasty.

Pretty darn good, but not as good as fresh.
This is the first time i purchased this and it will be a while before I am sure I would buy it again. The flavor is excellent. Personally,I have a preference for slices that are thinner as I think more of the flavor enters my dishes, but at the same time this does have an excellent perfume. Certainly I got a lot for the money. Its definitely not the same as fresh, but it sure is handy to have around. One use for which it works well is for making sauces and salad dressings where the dried galangai is used like dried peppers to infuse a subtle flavor.

Better option to trying to acquire fresh
I bought the fresh, first, dried some on my own and then this "to have", when I get back to Thai soups and other dishes. This is a much cheaper option to fresh. If you are anxious to try a recipe that calls for this I'd go ahead with the recommended ginger substitute then redo with dried galangal when you get it. I can't describe the difference in taste of ganangal v. Ginger. It's more subtle than ginger. Disposed of and not eaten as I recall.

Mine never rehydrated
They say soak them in water for 30 minutes before use. I tried that, I tried soaking them for hours, boiling water, warm water, chopped up...everything. No matter what I did, this stuff remained rock hard.This ingredient was the only problem with my otherwise awesome tom yum soup. I had to keep spitting hard galangal chunks out...or chip a tooth.Find a specialty shop/site and get fresh galangal.
