excellent quality knife!!
Really excellent quality knife. I’m not a chef but I consider myself a pretty experienced home chef and this is my first Yoshihiro and it blows my Shuns out of the water. Seriously it’s so beautiful I didn’t even want to use it the first time. I own a few carbon steel blades and this knife matches or is even better in terms of edge retention. I’ve been using this for 3 weeks and there’s almost no sign of usage on it yet and is still sharp as the day I received it!!!It’s pricey but this knife so so worth it.
