Makes easy work of slicing and dicing.
I have other Wusthof knives and I love them. I always use to think a knife was a knife and they were all pretty much the same. Then I got my first Wusthof knife and realized that all knives were not created equal. When you are doing a lot of slicing it is important to have a knife that cuts through vegetables and fruit with ease. These knives are worth the money you spend. It is extremely sharp.

Wusthof Knives are Excellent!!!
Wusthof knives are well designed and well made. I use These knives and Dalstrong and nothing else!! If one takes good care of these knives they will stay sharp and last long enough to pass on. Every Wusthof knife I have was literally sharp enough to shave with when purchased. These are hard to beat high quality knives that need to be properly used and well taken care of,

Slightly different than the knives from 7pc set
I have not noticed that the hollow edge on any of my Ikon creme knives (the ones that have the hollow edge) has made any difference in sliced produce not sticking. That being said, I LOVE these knives. This one fits my daily needs exactly and it's the one I use most frequently. The only other comment I have is that i had received the 7pc set as a wedding gift, and the handle on the santoku has a very slightly different feel than the rest of the set. The others have a more sleek plastic feel, this one seems to have a little more texture. I'm not sure if that's by design or maybe because the items were purchased years apart. Or if one or the other is counterfeit lol the color of the handle is also the tiniest bit darker...but you can't tell unless you're looking for the difference

I have been eyeing this knife for a while and now I can't believe I waited so long.
I have a few kitchen knives and I prefer the santoku style over a regular chef's knife. Since I hadn't ever owned a Wusthof, I was little leary of the price. I knew it was a reputable manufacturer, but I'm picky on how knives feel in my hand. This knife is on the heavier side and you can feel it. I love the hollow edge as food slides right off the blade. Remember that any knife will loose it's edge over time, you'll want to hit a honing steel with a couple of strokes before cutting just to true it up. I can't believe I waited so long to finally add this knife to my bag.

Expensive but worth every penny
Our 7" version of this knife was by far our most used kitchen knife. The price of this 5" version made it seem like a luxury and indeed, I looked at it for years before taking the plunge. We've had it less than a month but it's already the most used kitchen knife. The 7" gets used much less now.I've always found it difficult or at least tricky to sharpen kitchen knives. The neat thing about these knives is they go years without needing to be sharpened. Our 7" has yet to be sharpened and it's been used daily for some years now.

AWESOME KNIFE, but wrong one sent :(
LOVE this knife, would've liked it better if I received the item I ordered! The bubble wrap label says it's a Santoku knife, but the actual knife is a Chef's knife. This is unfortunately, being returned. Beautiful knives but I really was looking forward to a Santoku knife - my set already has the Chef's knife.The knife itself is 5 stars. The inconvenience and disappointment of getting the wrong item knocked off 2 stars...those are the ONLY reasons a couple stars dropped off the rating.

Nice knife
Didn’t come as sharp as the Wüsthof chef’s knives I have, but still sharp enough (and I’ll sharpen it myself soon) and does a great job on vegetables and citrus. Vastly superior to the various off-brand santokus in my kitchen. Definitely worth the investment.

Exceptional knife but...
This is my first Wusthof purchase. I currently own a Henckels knife set and wanted to add the 7" Santoku Chef knife to my collection for a new twist. The Wusthof Ikon Classic Santoku has an incredibly sharp edge, cutting through soft tomatoes with little effort was a joy. I nicked and cut myself without even knowing because the blade was so sharp. I love the ergonomic way the Santoku handle feels in my hand, the knife is very balanced. I haven't been able to rock this knife the same way like my classic edge knives, so this knife definitely cuts differently. The hollow edge is supposed to keep food from sticking to the blade while making cutting easier, it made cutting seem easier, not so sure about food not sticking to blade. Sadly after about 3 weeks of cutting on a wooden cutting board it had already lost some of it's razor sharp edge and will need sharpening. Wasn't expecting this to happen so quickly, but I use it several times per day. I'm planning on adding the regular Hollow Edge Ikon Classic 6" Chef Knife & 3.5" Paring knife to my growing Wusthof collection (Merry Christmas to me!)and eventually phasing out my tired Henckels for the new Hollow Edge tech. All in all, I'm converting.

Yes chef!
I can't fail a single thing here.Handle fits perfectly in my hand, the knife blade has an ideal angle for my use and mild curve allows fast and easy chopping of herbs and garlic.I've found it well balanced and ideal for my daily use in the kitchen.But if you are not used to having a santoku knife, let alone very, very sharp knife - first few tasks will surely require some carefulness. My wife has never used this sort of knife before and she has found it a bit challenging at first. Now even she can use it with the same confidence as I do.Great knife indeed - really an extension of your hand.

Expensive but You Get What You Pay For
This knife is expensive but you really do get what you pay for. I was sceptical at first, a knife is a knife right, but this really is like slicing through warm butter when cutting pretty much anything.Even when slicing herbs finely, some knives have a tendency to just mush things together or won't cut the entire strip of herbs, but these slices all the way through without any effort.Highly recommend you get a sharpening steel with it (although I didn't get a Wüsthof as it is simply too much).

Pleased
Very pleased. Very good quality. I was skeptical at paying, what to me, was a high price, but I'm glad I did. Super sharp. As described on internet and Google sites. Fast delivery also. DON'T buy a pull through sharpener, not even a Wusthof one, but use a whetstone, oilstone or special knife sharpening device only. Pull through sharpeners will change the cutting angle.

You get what you pay for, extremely sharp!PS as you can see in my picture, its got different writing on the blade. I contacted Wusthof who confirmed it to be their brand new design.

Wusthof are the finest knives you can buy
You could buy a whole set of knives in a block for less than the price of this single knife , DONT, quality comes at a price , Wusthof are the finest knives you can buy , buy them one at a time until you have the exact knife set that suits you ,,,,,,,ps your family ,partner etc will think you are mad but we know differently, buy the best ALWAYS !!!!
