Great cookbook for eating natural healthy foods!
Love this cookbook! The recipes are simple and unique in addition to being healthy and wholesome. Using only natural low glycemic sweeteners and healthy whole grains this cookbook is great for reducing inflammation in the body. As a professional runner this book is filled with recipes that fit my diet and can improve my performance and overall body composition. The beginning of the book starts out with a description of the recipes and the cooking philosophies behind them. I think it is good to know not only that something is healthy but why and how and I think this cookbook does a good job in explaining that. Eating purely was created by Elizabeth Stein, Owner of Purely Elizabeth (natural foods company making healthy cereals, granola, oatmeal, and more.) Some of the recipes use products from the purely Elizabeth line but a lot of them do not so it is a very useful cookbook even if you don't have access to purely Elizabeth products. Additionally all of the recipes are gluten free, all natural, organic, and mostly plant based.

Only cookbook you'll ever need!
I swear by this cookbook! I've recommended it to my family, friends, and coworkers. It's my cooking bible. Elizabeth does a great job of crafting a variety of easy, healthy meals that (as a college student) can be cooked not only on a college budget, but also with limited time in the schedule for meals. The kale and white bean soup is a favorite as are the taco and pasta recipes. AND the ingredients are often times used in several recipes, so you don't feel like you're buying and using 1/4 a can of artichoke hearts and then throwing it away. I can't wait to try all the recipes in this book, because I seriously will. I'll add a shameless plug here that the Purely Elizabeth granola is the bomb, too. Okay, stop reading this review and buy the book already!!

Beautiful photos and delicious recipes
I've been a fan of Elizabeth Stein's Purely Elizabeth granolas for several years and was so excited when she wrote her first cookbook! The recipes are all Gluten-Free, many are vegetarian or vegan. The photos are beautiful and mouth-watering, the recipes are simple and easy to prepare. I'll be giving this cookbook as a holiday gift to many on my list!

Amazing tasting healthy recipes.
I bought this book a little under 2 months ago and I have made over 2 dozen recipes from it already which is more than any other cookbook I've own for many years. Every recipe I have tried has tasted amazing. I love eating healthy and now my boyfriend also enjoy its because all the recipes from this book have been really delicious. It not only offers recipes but gives additional educational information on many of the ingredients so I can continue to learn about nutrition. I have learned how to use a lot of ingredients that I would have never cooked with before. The only issue I found really is that there are not serving sizes noted in most of the recipes but I have found that for most of the main dishes, it's a serving size of 2.

FANTASTIC Cookbook - Straightforward Recipes - Mouthwatering Pictures - a Great Book to Give as a Gift (Including for Yourself!)
A gorgeous, Gorgeous, GORGEOUS book! I'm something of a cookbook-o-phile, and I'm really picky about them. The recipes need to be straight-forward, easy to read, well-presented, and not complicated, or I just won't use the book (don't have time for finicky recipes). This book meets all of my criteria, and more! The recipes are wonderful, whether making them for yourself, or company, and the fact that they use fresh ingredients that also just happen to be gluten-free (and many of them are vegetarian or even vegan, although there is also a fish and poultry chapter) is awesome.This book would make a *wonderful* gift for anybody (in fact I got it to give as a gift and then promptly ordered one for myself as well).

An absolutely beautiful book..
The photos are amazing. The recipes sound healthy and yummy. I gave it for a birthday gift to a friend who works for our county's agriculture extension office... she loves it.!
