The Best White Color Gel On The Market
In my opinion, this is the best white gel on the market. I use this in my royal icing to get a bright white and also use it in my other colors to prevent separation and bleeding when preparing my icing. It is a perfect consistency as it isn’t too fluid, has no taste or smell. Americolor is a brand that I have used for 14 years.

Fix Mistakes with This
Gel color is definitely the way to good in food prep these days. The colors produced are more vibrant and true, using very small amounts of gel. That said, the first time I tried gel food color, I bought it a the grocery store and was sorely disappointed. High quality (read, "not the grocery store stuff,") gel color is so far superior to the stuff found on the baking aisle of your local grocery chain as to warrant its classification as a completely different product. That said, there are really only a few companies out there making the high quality stuff, and of them AmeriColor has always worked the best for me. I like the ones labeled, "soft gel paste," because they are more like thick liquid, and I grew up using those drops (the use of which, as I recall, had a STEEP learning curve). But why white? Well, have you ever added food color (any type) and been disappointed? Maybe it was the first time you'd used a particular color, not that you'd used too much. Adding this gel after a, "mistake," truly helps fix it. No matter the cause of the blunder. And not necessarily by making the original color go away (that would be true magic). Somehow, and I cannot explain why, every recent food-color regret I've had in the past few years has been at least moderately improved by the addition of this gel. I won't go as far as to say that it will give you a complete do-over, but it has remained overwhelmingly true that I have been able to save my creations after such a mistake reliably by adding white. It is intuitive that if you have a color that displeases you and you add white, you'll dilute the ugly. Less of a bad thing is generally good. But somehow the addition of white is more than that in some cases. It sort of purifies nice colors, too, by masking the original color of the food, I'd imagine. So, as food color types go, this is my favorite, the soft gel. As brands go, I prefer AmeriColor. As specific colors go, if you own one other color, then you need white (just in case). If you don't own one other color, then from the other reviews, you can see that white is a good place to start. And this is a great value; if you are like me, you'll find that you use your white the most often. Nuff said.

Excellent Bright White food coloring!
I have bought several bottles of white coloring and I will keep getting more from Americolor! Their colors are great for Royal Icing and Frankenfrosting, and the white is a must have. Add white to the RI before mixing up colors for a vibrant shade. I also use a little in my icing. It really gets rid of the yellow from butter and makes it a solid bright white instead of a questionable opaque yellowish white. You can also paint a thin layer onto raw cookie dough and bake it for a crackle look! When painting, keep in mind the white will crack along the brush strokes. Straight strokes, straight cracks! Awesome versatility in baking ability! It is smooth and thick which makes it easy to use. No leakage or broken bottles so far.

The best food coloring in every color
I've been a loyal user of AmeriColor gel food colors for years, and they never disappoint. They have every color imaginable and they blend easily with batter, icing and frosting. The colors are highly pigmented, requiring only a few drops for vibrant shades. Achieving a really intense dark color requires a little bit extra. However, be aware that some colors vary in consistency and are more liquid. Adjust the amount used accordingly so as not to thin the consistency of your batter or frosting. They are on the expensive side, but since they are so intensely pigmented, a bottle goes a long way.

So after I figured out how to make those little speckles, go away in the product works great. what I did to make the speckles go away was pre-mix it with a little bit of water before adding it into my sugar mixture.

I won't make royal icing without using this. Helps the colors pop and this size is very economical.
