Love this chocolate melting machine!
First, every negative review is correct. No idea what Kitchenaid was thinking with the "chocolate setting". If you follow the directions and use that setting, your chocolate will never melt. But, if you use the temperature control setting and turn up the heat high enough to melt your chocolate, then you can turn it back to the "chocolate setting" and it will keep your chocolate melted for hours. You can keep adding chocolate to the melted chocolate, stir it in and the new chocolate will melt. I had to make 200 peanut butter balls for a wedding. I literally melted chocolate in the morning and then came back to it throughout the day, did some dipping, left it alone, came back later, did some more. It was perfect. There was no mess from a double boiler and no chance of ruining my chocolate by getting water in it and I did not have to keep reheating like with the microwave. At the end of the day, I used the last of the melted chocolate and then put the interior bowl in the dishwasher! And one more thing, it also did not fit on my Kitchenaid mixer. No matter. I don't need a mixer to stir melted chocolate and dip confections. I love this machine!

The best thing about it is that it give you a much smaller bowl when you need one!!!!
I use a 6 quart KitchenAid mixer, which is pretty large, and much of the time bigger than I need. This comes with a dough hook, a whisk, and a paddle, and if you only need to beat a couple of egg whites it can do it, whereas your 6 quart cannot. I also have the small bowl (a three quart, I think) which fits both the 5 and the 6 quarts, but it only comes with one attachment, and it simply isn't as versatile as this unit is. So, even though I don't temper as much chocolate as I thought I would, I still get plenty of use out of it.

Terrible
I’m shocked KitchenAid sells a product this bad. All I wanted this for was custard ice cream bases and meringues. Finnicky egg dishes that require 170F and 185F respectively. I don’t like standing there holding a thermometer and stirring and getting antsy to take things off as soon as the temperature is hit. Well, I got this to 170F. The contents did not get any hotter than 135F even after an hour. I decide to crank it up to 220F and see if the contents can even reach 170F. At this point, I basically paid $250 to stir and hold a thermometer in a new pan, but maaaybe if it could reach 170F, I could work with that. I could time how long it takes a quart of ice cream base to reach 170F Haha, no. Contents would not budge over 161. So I guess all this is good for is proofing dough, maybe melting chocolate but judging from the reviews perhas not. I just don’t understand why they would sell this. The *idea* is great but it feels like no one actually tested this machine.

A great investment for what it costs, but design could be better.
When this bowl was announced I was really stoked. I have been wanting to get something to automate tempering for years, but the decent machines ($2K and up) were too far out of my price range. I ended up getting this as a gift in September but because of the freakishly warm and humid fall we had, I didn't really get to use until mid-December. I was really frustrated on my first two times using it as I counted on the temperature that was displaying as that being the temperature of all of the chocolate in the bowl. On my third attempt, I realized I would not use the automated program for chocolate but do it manually. I tempered milk chocolate and measured the temperature in the bowl with both an instant-read thermometer and an IR red thermometer gun. The design of this is very poor for something that required critical temperatures like tempering chocolate, because the temperature reading is only the chocolate touching the bowl. The chocolate being mixed around in the middle can be 5-10 degrees cooler or hotter depending on whether you are taking the temperature up or down. It's imperative to take the temperature of the chocolate that is in the middle of the bowl touching the paddle. Most chocolate tempering machines are measuring the temperature near the baffle. This device would have been better if there was a thermo device measuring the temp on the paddle. I used Peters Ultra couverature chocolate, take it up to 113, down to 83, and back up to 87 and it works like a charm every time. I set the those temps on the programmer but I use an instant-read in the middle of the chocolate a while after it hits those temperatures on the display. Also, there are only two "programmed" automatic tempering settings when there are three different kinds of chocolate, dark, milk and white. Milk and white can probably be done at same temps, but the programmed tempering settings are basically useless. I do not have issues with the temperature up the sides of the bowl. Mine seems to work flawlessly. Although I got this as a gift, i know it was $250. That was an amazing investment for the automation it does bring to tempering chocolate. I set the first temp and let it do its thing. After it displays that it hits that temp, I start checking with an instant-read. Very little hands on.

I love this for tempering chocolate
Where has this thing been my whole life??? I love this for tempering chocolate!! It works perfectly! First off let me say I looked all over and saw some positive & some very negative reviews about this item. I searched "YouTube" and saw a lovely video by Chef Rachida about using this bowl for tempering chocolate. I thought I would give this a try since I haven't had much luck with my tempering skills. You can fit a large amount of chocolate in this mixing bowl which is a huge plus for me and its a lot cheaper than the tempering machines out there! My very first batch came out like a pro! Perfectly tempered chocolate & so easy! Thank-you Chef Rachida & thank-you KitchenAid.....I am one happy candy maker!!

DO NOT BUY THIS ITEM. It does not work as specified and the seller refuses to take responsibility for it. The unit does not heat to the temperatures specified and the seller just says "deal with the manufacturer". The manufacturer cannot give a refund as I did not by it from them. GOLDA's Kitchen SHOULD BE DESISTED FROM AMAZON!~!! THIS ALSO DOES NOT FIT THE COSTCO VERSION. The specs indicate that it is for a "lift" stand mixer. WRONG!!!! Also the unit will NOT HEAT ANYTHING PAST 150 Degrees F. THIS UNIT IT A COMPLETE FAILURE. It does not even show you the correct temperature. The display says 200 F and the real temp is 145 F. I don't even give this one start.. RETURN THIS PRODUCT IF YOU HAVE ONE! DO NOT BUY THIS PRODUCT! DO NOT BUY FROM GOLDA's Kitchen!!

Muy buen producto, todo bien, lo negativo es que aunque tiene instrucciones en español, inglés y francés, el recetario es solamente en inglés, aunque se lo solicites a la marca, no cuentan con él.
