This is a whole lot of coconut. I need one of the containers I use for five pounds of flour to hold it. The bag reseals, but I find bags inconvenient to store. We keep up roughage in our diet by a steady stream of coconut kisses. That's just three cups of this, a can of sweetened condensed milk, mix, bake spoonfuls at 350F for 16 min. If the coconut isn't good, you'd know it on the first bite. Three with black coffee in the morning keeps things rolling. More than that and you may need an extra bathroom. Because this has no sweetening, it works in curries and other savory dishes, too. The coconut is finely ground, not flaked or shredded. It's always in good condition. We use it up in, at most, six or seven weeks, though usually in less. So we can't say how it keeps long term. It's now the only coconut we buy.

Teeny tiny shreds vs.. desiccated coconut texture
As noted by others, this is an extra, extra fine shred. Compared to desiccated coconut from this company, it is noticeably teeny strips, rather than desiccated's tiny particle bits.. Baked into a cookie, this is noticeably chewier and visible in the finished cookie. After eating a cookie made with this there are lots of coconut bits caught in your teeth. It's not really bothersome, but worth noting. Reminds you to floss your teeth! This is an excellent product: fresh and tasty. For my purposes, which is only cookie making, it really comes down to personal preference in textural differences and the price. Same great taste as the unsweetened desiccated, but less cost per pound.

Very very very small pieces
Quality is good for taste. My problem was it states shredded coconut(thin). This is thin very very thin and small. Almost looks like sugar in the bag or stevia granuals. Too thin for what I needed.

Finely grated coconut
Good product, fresh, love that it is unsweetened, which is a little harder to find. I used it in granola and it had a great taste.

Amazing Fine Ground Soft Dessicated Coconut For All Your Baking Needs
We got this desiccated fine coconut for baking and it worked perfectly. The trick it to let it sit with the liquid awhile so it can rehydrate a bit. There is no added sugar of any kind in this coconut. It is nice and dry without being hard or coarse. It smells like coconut and the fine, smooth texture makes using this for baking super easy. I can't wait to test the limits of this coconut's baking ability with other recipes. I will definitely be getting this again. I would recommend this to anyone looking for a good fine, dry, smooth, soft, no sugar or sweetener added coconut for baking.

Grated to fine!
I was not happy with the product. It was very fine grated and not good in baking or a cake icing. I still have it in my pantry. Maybe good in ice creme or smoothies???
