Q: Does this unit have to sit flat on counter or can I put it up so it doesn't take up so much counter space?

It does have to sit flat on the counter while you use it, but I store mine upright in the cupboard to save space.

Q: Amazon is recommending a 11" x 50' roll to purchase with this 2100 model. Will the 50' roll fit inside this machine?

Of course you can buy any brand vac bags (check your max width) and of course you can cut the 50’ roll down to any smaller size roll. But I don’t cut it down as you don’t need to keep the roll in the machine to use this equipment. Just sit the 50’ roll in the holder (door top open) use the sliding cutter, then sit the roll to the side (out of the way). Now using the cut material (bag) vac and seal. Really this is easy, don’t over think this. BUY THE BIG ROLL AND SAVE MONEY

Q: How much space is needed between food and sealing (my older version ), I need about 4 inches, wasteing so much bag. Does this machine require less

We recommend leaving approximately 2 inches between the food and the end of the bag to guarantee a good, strong seal.

Q: Does this sealer have the CrushFree Instant Seal that stops the vacuum process to prevent food from crushing?

You can press the seal button at any time to immediately stop the vacuum process and begin sealing the bag. This prevents crushing delicate items such as bread, cookies, and pastries.
