If you have Vol 1 then you must buy this
A great follow up to Vol 1. Especially great is the chapter about scaling up.

Clear, almost foolproof
This is so clear and so friendly that we can forget our greasy collection of cookbooks accumulated over the years. Following Latif's on youtube and reading these 2 books has revitalised my cooking.

Works standalone but Volume 1 contains the most popular curries
I bought this Volume 2 manual for creating British Indian Restaurant "BIR" style curries at home before Volume 1.The method involves making a large quantity of base gravy - enough for over a dozen curries, pre-cookimg meats, then making single portions of curry. This volume has guidance on upscaling too.Recipes are very well explained and resulted in rich flavoursome curries.I found that Volume 2 was fine as a start point as key recipes - for the base gravy Mark 1 etc are repeated from Volume 1. A base gravy Mark 2 is added also. The most popular curry options Bhuna, Rogan Josh, Madras, Tikka Masala....etc are in Volume 1 though, and I soon bought that too. Curry examples from Volume 2 include Methi Chicken, Kalimirch, King Prawn Zafrani, Kashmir and Moghul.Beware that you'll need a very large pan to make the base gravy and pre-cook the meat, (I used my stock pot). There's a lot of oil involved and cooking at high temperature. I found it very messy with lots of spitting and popping of oily liquid. Also needed to be very organised and to have all ingredients close to hand as once the cooking of a curry starts it's fast, high temperature work.

Love curry, you NEED these books!
I have them all! Mad I know but worth it, first two on Kindle and the Compendium in real hard back book form. The curries take a bit of a faff to get organised, but they really are worth it! Sooooooooo much better than take away curries. I would recommend to anyone and everyone who loves curries. Go for it.

Well written and explained very clearly
I intend to make my own restaurant style curries and this book will definitely help me to achieve this.

I love cooking especially Indian meals and the recipes in this book are the nearest to authentic Indian restaurant meals I have ever tried would highly recommend anyone who love Indian food to buy these books by Misty Ricardo.
