Can I use it on top of wood stains?

Yes, it works very well over fresh stain, I haven’t tried it over old stain but I don’t see why the wood wouldn’t soak it in just the same.

Is this a good product to use for a small butcher block kitchen island? I plan to sand and stain first, then apply this product.

Absolutely! Be careful with the stain. You want to be sure that it is food safe like Odie's.

How often to apply on new wood dining table?

Normally, on wood that was not treated this should work for years. I would assume if the table is in the sun you may want to reapply Odie's Oil again in a few years. If this is a timing table you may want to use a polyurethane finish .

How long does the sheen last?

Odie's is a low luster, more natural Matte finish. Follow the instructions and you will be well served.
