If you want to future proof your wiring, get Cat 8 but at the speeds you mention, a decent shielded Cat 5e or Cat 6 or 6a will work just fine. You'll see no speed boost just from a "faster" cable. Avoid Cat 7 and 7A due to finicky proprietary connector issues.

If your wifi extender is set to allow connections to your main access point via the Ethernet port, then yes. It will work just like any other Ethernet cable. If you have tried a different cable and it did not work, your extender is either not setup properly to allow this or it is not capable of it.

Cat6 or Cat6a is all you need. Any latency you feel is either the port or you provider. CAT8 is bs, save your money.
