I lived in Nagasaki prefecture on Kyushu Island, Japan, for almost four years. I learned to love authentic miso during that time. After moving back to America I found it difficult to find miso that tasted authentic let alone miso that didn't have a bunch of junk on the ingredient list. This miso is very authentic and is not chalked full of trash ingredients just: Water, Rice, Whole Soybeans, Sea Salt, Sweet Potato Syrup and Sugar Cane Alcohol. This miso is very warm with that textbook "umami" flavor. It is a little sweet, but the sweetness does not harm the warm flavor. The packaging was very solid. I bought it for a Japanese meal on camping trip and it endured several miles on water, on trails and general rough treatment. I combined this with some dried shiitake mushroom, dried wakame sea veggies, ahi tuna pouches, rice noodles and some bonito fish flakes and the dish was amazing as a camp meal! I hope this helps you make an informed decision! ~Mahalo My only gripe is a minor one because I am a cheapskate... The price per ounce is a little high for my blood. I would only get this on a special occasions.

The perfect miso for marinating your Sable Fish. Or adding it to your homemade dressing/sauce. I love this stuff and it's lasts for weeks in the fridge.

I was looking forward to trying this miso and it’s not bad but not at all what I expected flavor wise. I’ve had miso at different restaurants over the years and there is a distinct flavor. This miso lacks that. Someone else said it took way more than expected to taste it and get the expected saltiness and I would agree except I find no real ‘miso’ flavor. It may be because the main ingredient in this light sweet paste is Rice. It’s not terrible, I had to use at least twice the recommended serving size to really taste anything. I’ll probably try it in some recipes like a sauce for meat and veggies. Price wise I was supposed to get a 6 pack of the white sweet miso but only one arrived. It’s definitely not worth 7+ dollars for a single 5oz packet but if you can get the full 6 pack it might be worth your taste test. I fortunately got a refund and am glad I did or I would have been quite aggravated.

This miso is great and I love the deep dark flavor this miso has. I use it to make honey miso salmon and chicken and it is amazing. I usually use the white miso but decided to give this one a try and I am glad I did. With it being made with brown rice it has a super nutty flavor that just goes so well on chicken. I loved it and the flavor it gave. I will be buying more of this to try in other dishes as well. I also love the packaging too. It comes in a convenient squeeze tube like apple sauce so it makes it easy to portion out how much you want and then reseals to be put in the fridge and it doesn't take up a lot of room. Great product with great packaging.
