Why have the temp guage if you cant control the temperature on the boiler?

The temp gauge tells you when what you're getting is either foreshot (up @80deg c), head (@80-90deg c), heart (@90-95deg c), or tails (up to @97deg c). Essentially each one of those should be gathered into a separate jar, the foreshot disposed of, and the heart possibly mixed with a little of the others, depending on what you're after. The book "The Joy of Home Distilling" is a very good one, and the manufacturer of the still has a great website with videos.
