Poorly written
This is a poorly written and edited cook book. I bought this sous vide cook book for my granddaughter, a novice cook.Were I to give it to her, I would have had to go through the entire book and write in explanations for the lack of information .Some examples: after cooking 'earthy and sweet beets', the cook is instructed to "serve with the goat cheese and orange slices or with the meat." What meat? None mentioned in list of ingredients. In 'Good Old Fries', after the potatoes are cooked sous vide, the instructions say to 'transfer fries to a baking pan. Cook for 3 mins on every side, so that fries become crispy'. I presume an oven is involved, but neither it or a temperature are suggested.Eggs instructions are loose, to say the least. Soft boiled eggs : 'use a slotted spoon to kindly place the eggs in the bath' . Poached egg : 'put the eggs directly into the bath...' One assumes the first recipe is referring to eggs out of the shell, and the second, still in the shell.So far, only 6 recipes in, so would call this cook book a failure.

Disappointing
Just flipped through the book upon arrival and noticed so many mistakes in ingredients and directions that I would not trust accuracy of results of any recipe. Examples: p 53 - "soya" sauce? for soy sauce; p. 57 Mint Chicken Thighs lists only "drumsticks" in ingredients p. 109 omitted word "ginger" in ingredients for Ginger Sauce. Also main ingredients of pork, chicken, etc are not provided with specific amounts leaving one to guess whether to use 3 oz or 3 lbs! $5 was too much for this book but also too little to bother returning it. It will be donated.

Supper book..
Excellent cookbook. Wonderful photographs. The formulas are extraordinary, and actually very much clarified. There are photographs for each formula. I wish there were general cooking graphs separated from the formulas, yet there aren't. Love this cookbook. I am purchasing two duplicates - one for myself and one as a present for somebody who has sous vide cooker.

Inconsistent and lacking guidance
I am new to Sous Vide cooking. I do need some basic advice on cooking temperatures and hours needed for a piece of food (meet, fish, whatever) of a given size (weight, thickens, etc). These data are scattered around the book, difficult to find and the descriptions of preparations are inconsistent.The book may be good for somebody who has basic knowledge of Sous Vide cooking...

nice book
The recipes are phenomenal, and in reality especially illuminated. There are photos for every equation. I wish there were general cooking charts isolated from the recipes, yet there aren't. Love this cookbook. I am obtaining two copies - one for myself and one as a present for someone who has sous vide cooker.

Apparent Cooking Time Errors
I am not sure I trust the cooking times included in the book. For example, there is a recipe for boneless chicken breast that calls for a 40-minute cook while a couple of pages later there is a chicken breast recipe (not specified whether boneless or bone in though the picture looks as if it is boneless) that calls for something like 3-4 hours. It is hard to explain the difference. Lastly, there is a recipe for lamb curry that uses leg of lamb that is cut into cubes and, per the recipe, cooks for 3-5 DAYS. Is this possible or even safe? These apparent glaring errors make me question all recipes.

Got some good ideas
I am a meat and potato person so there are few cookbooks that I find many useful recopies in. That being said this book is very useful in getting ideas and learning how to cook with Sous Viide. I have found Sous Vide a very good way to cook meat and several other items. As I'm just getting started with this method I find this book helpful.

Fantastic cookbook.
Fantastic cookbook. The author does a good job providing an overview of the sous vide method, along with tips and hints for making your best meals and the recipes to do so.
