Adds great flavor to grilled meats
Grilling with wood chips adds a new flavor dimension to the gas grill experience. To be clear, you're not turning your grill into a full-fledged smoker but with an inexpensive smoke box, full of the chips of your choice, you can add a pleasant, smoky flavor to your grilled meats and vegetables. While I primarily use mesquite and hickory, I find fruit woods like cherry or apple are a nice change of pace as they provide a more delicate, slightly sweet smoke flavor, which is especially good for chicken or pork. You can even blend different types of wood for your own signature smoke flavor but be advised that some combinations work better than others. My smoke box, filled with dry chips, provides 20-30 minutes of good smoke which is plenty for something like a pork tenderloin, thick chops or pieces of chicken. It is not as satisfactory for larger cuts of meat like a beef brisket or Boston butt. A whole chicken will do quite nicely if you quarter it first. The trick is to preheat the grill on high to ignite the chips and start them smoking, then turn the heat down low when you put the meat on. It'll take longer to cook but it is so worth the wait! Also, avoid barbecue sauces as they will mask the smoke flavor. Marinades or dry rubs work much better.

Great In Electric Smoker
Absolutely love the flavor these put out in my electric smoker. Perfect for smoking ribs or whole chickens. Probably one of my favorites from the company other than the cherrywood.

Switching and sticking with this brand.
Though I prefer my Weber Smokey Mountain when it's hot out I use my gas grill. After trying several companies this is the brand I'm switching to for smoking on a 3-burner gas grill. Instructions state not to soak so today I didn't. Have tossed all my smoker boxes and now buy those 3/.99 loaf pans from the grocery store, cut a few holes in the bottom with the tip of my scissors, fill it with chips and place it uncovered in the back right on top of the flavor bars. Put that section on high and within five minutes or so the smoke starts. Leave it on high till the chips flare (which they probably will) and use a spray bottle to put the flare out. Put the butt on the either non-heated or very low heat sections and turn down the back burner. I take another small tray with chips and place it on the back section, right on top of the grate. This won't smoke by itself since you've turned the heat in the back down to control the overall temp. However, after ten minutes or so these chips are so dry that if you toss one or two kitchen matches on top they'll immediately ignite. As advertised, chips are easy to start (they're already kiln dried) and will smoke for 20-30 minutes. When you add in the second tray you get 45 minutes or so which experts say when done at the beginning of the smoke is more than enough. The trays are reusable so the cost is very low and for me they work much better that my smoker boxes. Hope this helps anyone trying to smoke on a gas grill.

Pecan wood chips have turned out to be a general go to smoking Chip for all of my smoking needs.
They were great for vegetables, mushrooms, olives, pork, chicken, or anything that didn't demand a very strong smoky flavor. Pecan wood chips seem to be the most universal and medium flavor wood to use for smokers. Pecan is not as intense as Mesquite or hickory, and it is more appropriate for a chicken or pork than it is for beef.

Wood Chips
Ensure you soak them a little longer than suggested. The smell while smoking is strong. The flavor while eating is not as strong as expected
