Then I bring the braise up to a boil, put on the Dutch oven lid, and slide it into the preheated oven. The pot simmers perfectly for hours at a time or however long I need it to with only a check after a half hour to see how the simmer level is doing. And Voila! the results are astounding. We love the color of our Dutch oven too (solid red) so much that we display it on our dining room table when it's not on the stove. I can't see how any of the fancy (and expensive) French brands can perform any better than this beautiful, American made, Lodge pot does. *Note: For sautéing ingredients, I use a different skillet so not to damage the enamel finish.
