Celebrate "groundhog day with cookies"
This will be used as a cookie treat for the Groundhog day as a fun cookie.Groundhog Cookies Recipe 2 cups sifted flour 1/2 teaspoon salt 1/2 teaspoon baking soda 1 teaspoon baking powder 1 teaspoon ground ginger 1 teaspoon ground cloves 1 1/2 teaspoons cinnamon 1/2 cup soft butter 1 cup sugar 1/2 cup molasses 1 egg yolk 1 egg, slightly beaten Currants or raisinsSift together first seven ingredients. Set aside. Cream butter and sugar until fluffy. Blend in molasses and yolk. Stir in flour mixture and mix well. Form into a ball.Wrap in plastic wrap. Chill overnight, several nights or freeze.Place small amounts of dough on a sheet of plastic wrap, and cover with plastic wrap. Roll 1/8 inch thick. Cut out cookies with lightly floured cutter.Place cookies on greased baking sheet. Brush with slightly beaten egg. Decorate with currants or raisin eyes. Repeat until all dough is used.Bake 8 to 10 minutes in a preheated 350-degree oven. Cool slightly before removing from cookie sheet. Makes 72 or more medium-sized groundhogs.

Love this little cookie cutter
I saw a recipe on Facebook and it was groundhogs. I was born on Groundhogs day so I had to find the cookie cutter. I used it on my favorite sugar cookie recipe and they turned out so cute. I'm a home bake with tons of cookie cutters. This is a new favorite and a wonderful added addition to my collection.

Good Groundhog.
Good cutter, but careful poking his little tail out! The neck is a little fragile, too. Let cookie cool completely while lying FLAT!

A special holiday cookie cutter
Living in Central PA, Punxsatawney Phil is only a hop, skip, and a jump away from my house, so Groundhog Day is kind of a big deal. Whenever I make groundhog-shaped sugar cookies, they are gobbled up faster than you can say "Six More Weeks of Winter."The size is good - enough to know you you have a cookie, but not so much that you have to make 3 batches of dough.
